Who's Up for Colombian?

 

Colombian street food comes in from the cold in Collinsville at Husk where, thanks to chef-owner Jordan Stein, tacos come with a New American twist and apple pie empanadas might be on the dessert list. A CIA graduate, chef Stein studied gastro-molecular cuisine in Colombia with chef Juan Manuel Barriementos at El Cielo but got a lot of ideas from an empanada stand outside. At Husk he puts them playfully in play. He creates hot sauces with chilis he grows himself  (800 bushes, 30 varieties), serves fish tacos escabeche style, makes coconut lemonade, and doesn’t own a freezer because everything is made fresh every day. 105 Main Street, 860/693-4300, huskct.com.
